Lemon Pepper Chicken Sandwich

3 oz Chicken thigh
¼ cup Flour
1 large Egg
½ cup Crushed corn flakes
Zero calorie oil spray
1 tbsp Light butter
1 medium sized Lemon
1 tbsp Soy sauce
½ tsp Black pepper
1 tbsp Honey
1 medium Cucumber
¼ medium Red onion
½ tsp Salt
1 tbsp Olive oil
1 tbsp White balsamic vinegar
½ tsp Chili crunch
1 tbsp Light sour cream
1 tbsp Fresh chives
1 Ciabatta baguette
Step 1
Take one chicken thigh and dredge it in flour, then egg, then crushed corn flakes.
Step 2
Spray with zero calorie oil spray and air fry at 385F for 16 minutes, flipping halfway through. Cook until an internal temperature of 165F is reached.
Step 3
In a pan, add light butter, lemon juice, soy sauce, black pepper, and honey. Heat and mix until thickened and sticky. Serve warm.
Step 4
In a container, add cucumber, red onion, salt, pepper, olive oil, white balsamic vinegar, honey, and chili crunch (optional). Close the lid and shake well.

Mix light sour cream and fresh chives.
Step 6
Assemble the sandwich with the air-fried chicken, lemon pepper sauce, cucumber salad, and sour cream chive spread on a ciabatta baguette.
